The chef's knife

For chopping, nothing beats an 8-inch or larger (but not necessarily expensive) chef’s knife. With the handle in one hand, press down on the top of the tip with the other, and rock the knife through the food (pivoting from the tip, not lifting the knife), then repeat at right angles. If you didn’t know this, trust me: It could make you a whole new person.
